Mandatory picture of Simon:

Okay, moving on to the blog entry:
We had the opportunity to buy a lot of corn and decided to freeze it. We started with 5 cases, with 48 ears per case:

Aw. SHUCKS!!! we did a lot of schucking. The kids really helped out with this phase of the project

Aaron was better at schucking than anyone.... he took 2 seconds per ear, just two rips for him to do what took the rest of us like 8 rips to get off. A hidden talent!

Here's the master schucker himself demonstrating the technique:

One would think shucking would have been the hardest part.... well, it isn't. You have to blanch the corn, then take the kernels off the cob, then bag, then freeze. Mom Williams came over with an electric knife and helped out a bunch

Aaron finished up when I had to get Simon to bed. It was a long project, but we finished---and we had about 40 bags, plus a bunch of ears that we didn't process because, well, this corn was REALLY REALLY GOOD!! Here is a picture of a bag we made of about 5 cups of corn, multiplied by 40 bags-- 200 cups of corn.

As usual, this was a case of Leann biting off more than we could chew as far as projects go, and we were cursing the corn farmers before we were done, but it really turned out well and when we cooked some of our frozen corn the other day, it was really yummy and totally worth it!
You just made this Nebraska girl PROUD!!
